Ingredients:
200 g Baby corn 1/2 Capsicum sliced 1/2 Onion sliced 1/2 cup Corn flour 1 tbsp lemon juice 1 tsp chilly pwdr 2 tbsp tomato ketchup 1 tbsp Chilly sauce Cilantro or spring onions to garnish Oil to fry.Method:
1. Slit the baby corns and cut them into pieces if they are too long and boil them with little salt until they are soft or half cooked.
2. In a bowl add some corn flour,salt, chilly pwdr and add the drained baby corn pieces and try to coat them evenly with the flour. The moisture in the baby corn must enable the flour to get coated.
3. Add the lime juice and mix it well. Add more corn flour if it is still wet.
4. Now heat oil in a pan and deep fry the baby corn until they are golden brown.
5. In another pan, add 1 tbsp oil and saute the sliced onions.
6. Once the onions become transparent add the capsicum and saute until they are cooked.
7. Now add the fried baby corns to them and also the tomato ketchup n chilly sauce and saute for 3 mins.
8. Once the baby corn is evenly coated with the sauces and they are dry , transfer it to the serving plate.
9. Garnish the baby corn fry with some chopped cilantro leaves or spring onions and serve hot.

* Don’t over boil the baby corns, its enough if they are half cooked.
* Add just enough corn flour such that all the moisture in the baby corn is absorbed and they r coated evenly with the flour.
* You can add soy sauce along with the ketchup and chilly sauce if u want to have a Chinese flavour.
This is an awesome appetizer and its not only easy to make but really quick dish if u have the ingredients handy at home.
