Ingredients:
In a bowl: 1 Cup Rice Flour 1/4 Cup Semolina/Rava 1/4 Cup Maida 2 tsp Cumin seeds/Jeera 2 tsp Sesame seeds 1/4 tsp Asafoetida 1 tbsp Chopped Ginger 1 Finely Chopped Onion 2 cloves of Garlic chopped Some Curry Leaves Some chopped Cilantro leaves 3 Chopped Green chillies _______________________________ Handful Groundnuts 2 tbsp oil for Vada dough Oil to Fry Salt to taste.Method:
1.Put all the above ingredients under “In a bowl’ into a bowl.
2. Dry roast the groundnuts and grind them into coarse powder with visible pieces of the nut and add it to the bowl.
3. Now add 2 tbs oil and some salt to the mixture.
4. Sprinkle some water and make a dough out of the mixture (like a chapathi dough).
5. Heat oil in a pan. While the oil heats, divide the dough into smooth equal balls.
6. Once the oil is hot flatten these balls into a really thin vada(unlike our regualr vadais) and fry them in the oil in medium flame until they are golden brown on either side.
7. Depending on your pan size fry not more than 4 vadais at a time.
8. Dry them in a paper towel and then serve them hot with ketchup or any spicy chutney of ur choice.

* Make sure that you chop the onions,garlic, chillies etc really fine as we want all of them to be incorporated in a chaptathi dough like fine dough.
* Some ppl add a pinch of baking soda to the dough but i feel its really not necessary. You can make very crispy vadai even without the baking soda.
* You can also add some spinach or methi leaves to the dough if u want.
* Don’t overcrowd the pan while you fry the vadais. At a time not more than 3-4 vadais.
* I was told that these vadais will remain crispy for about a week and are very apt for travel and picnic snack.(haven tried though)
Madhur Vada is an authentic Mysore or Karnataka snack.
My mom saw this recipe in a TV show and she said it looked really yummy and felt that i shud surely try.
I was also looking for a quick snack recipe and i tried this immediately once she told me ;).
This is indeed really quick and instant vadai recipe. Me and my hubby really enjoyed munching this vadai for a evening snack. 🙂
This hardly took 15 mins(for making the dough + first set of 4 Vadais). This recipe will make about 10-12 Vadais.
If you have a craving for vadai just don’t worry!! You don have to soak the dal and wait for couple of hours to fulfill your craving :p This is a great quick yummy instant vada and this actually doesn need any dipping r chutney. May be a ketchup will do.
