Vegetable Kurma!!

Neer Dosa & Veg. Kurma!!

Ingredients:

For Kurma:
1 Cup boiled Mix vegetables (Some Peas,Cauliflower,Carrots,Beans etc..)
1 tsp Cumin seeds
1 tbsp Ginger-Garlic paste
1 tsp Garam Masala
1/4 cup milk
1 tbsp Oil
Salt to taste
Cilantro leaves for garnishing

To Grind:
1 tsp Khus Khus
3 tbsp Grated Coconut
1 Onion Chopped (fried/sauteed)
2 Green chillies chopped
3 Nos Cashew
For Neer Dosa:
1 Cup rice
1/4 cup grated coconut
Salt to taste

Method:

1. Soak the rice in water for atleast 3-4 hrs.

2. Grind the soaked rice,coconut and salt with some water into a fine batter.

3. The consistency of the batter should be as thin as the consistency of the buttermilk. Let the batter sit for atleast an hour before you want to make the dosas.

4. In a pan, heat oil and add the cumin seeds. Once they splutter add the ginger-garlic paste and the garam masala and saute for 15 secs.

5. Now add the ground mixture (all ingredients under ‘To Grind’ into a fine paste) and milk and let it boil for a minute.

6. Add the boiled vegetables,salt and cook for about 5 mins.

7. Remove it from flame once the gravy thickens and garnish it with cilantro leaves.

8. Now heat a non-stick dosa griddle/pan and pour a full spoon of batter and spread it in a circular fashion.

9. Cook it with a closed lid for 1-2 min. Once u find that the dosa is soft n cooked on top, you can just slide it onto a plate.

10. Repeat the process for making remaining dosas and serve the neer dosas hot with yummy veggie kurma.

* The Neer dosa batter’s consistency should really be watery and running, just like the butter milk. Only then we ll be able to make soft and thin neer dosas.

* Some ppl add green chilly also while grinding the dosa batter but i insist not to because that spoils the color of the dosa. I like the neer dosa to be really white.

* There is no need to flip the dosas to ther side since they cook in steam when cooked with the lid on 🙂

* You can add your choice of mixed veggies to the kurma and customize it to your taste.

The Neer Dosas are great with Vegetable kurma and also mulagha thokku(green chilly chutney ).

Kesar n Cashew Ras Malai!! A Valentine Special!!

Heart Shaped Ras malais for my Sweet Heart!!

Ingredients:

For Cheese/Malai:
3 Cups Milk
2 tbsp Lemon juice(diluted in 2 tbsp water)
For Ras/Rabdi:
3 cups milk
1 cup sugar for rabdi
1 cup + 3 tbsp  for sugar solution
5-6 Cashews powdered
1/4 Cup chopped pista and almond
1 pinch food color yellow (optional)
pinch Kesar/saffron
1tsp cardamom pwdr.

Method:

1. Boil 3 cups of milk and once it starts boiling add the diluted lemon juice slowly and keep stirring it.

2. You will see the cheese separating from the milk.

3. Now put a soft muslin or cotton cloth on a stainer and drain the whey and collect the cheese.

4. Now immediately run it  through cold water to remove the lemon flavor from the cheese.

5. Tightly squeeze all the water from the cheese. Wipe it or rub it with another dry cloth to remove the excess moisture.

6. Once the cheese has lost most of its moisture, u shud be able to make a nice soft dough.

Make the cheese into a fine dough..

7. Now take small portion of the cheese and make them into heart shaped or any shape u want.

8. Make sure they r soft and have no cracks.

9. Bring the Sugar solution(Sugar:water::1:6) to boil in a cooker and then steam cook these heart shaped cheese for about 7 mins.

Two lill hearts puffed up in the sugar solution 🙂

10. Meanwhile, we shud have our rabdi/ras ready. Boil 3 cups of milk in a medium flame until they reduce to almost 2 cups.

11. Add 1 cup of sugar,powdered cashew,chopped pista n almonds, kesar, cardamom pwrd,pinch food color(optional) to the boiling milk.

12. Let it boil for about 3-5 mins in low flame. Keep stirring to ensure that u don burn the bottom.

Yummy rabdi or the ras for the rasmalai 🙂

13.Dissolve 3 tbsp of sugar in a bowl with1cup of  water(less warm). Now transfer the puffed up heart shaped cheese to this solution in the bowl.

14. After some 30 secs. Carefully squeeze the heart(ooouchhh!! :p careful don break them ..) and put them into the rabdi/ras and boil for a min.

15. Transfer it to a serving dish and once it comes to room temperature, refrigerate it for atleast 2-3 hrs.

Heart shapped Ras malais r ready!! Try it on ur sweetheart , it works 😉

16. Garnish it with some pista nuts and feed your love ones! 🙂

* To make regular rasmalai, divide the cheese into equal parts and make soft small balls and flatten them slightly.I made it heart shaped as it was a valentine special.

* The sugar solution in which u are steam cooking the cheese must be a diluted sugar solution in the ratio 1:6  for the cheese to really puff up. The cheese will become hard and may also break if your solution is thick/concentrated.

* Take extra care when u squeeze the puffed up cheese before dropping them into the ras/rabdi.

I should really admit that this heart shapped ras malai came out great to my own surprise! 🙂

I was really worried whether i will get the heart shape right bcos i din have any back up plans for Vday 😛
