Quick,Easy, Home made Creamy Cheesy Garlic Pasta Sauce…

Mushroom Spinach Pasta!!

Ingredients:

1 1/2 Cups Pasta (i used Shell)
4 Fat Free Cheese Singles
1/4 cup Milk
1 tsp Crushed Red Peppers
1 tsp Itallian Seasoning Mix
1 tsp Garlic Powder
1 cup Mushrooms
1 cup Spinach
1 Onion
2 tbsp Butter/ Oil
Salt to taste.

Carrot Pulav!!

Ingredients:

2 Carrot grated
1/2 Capsicum sliced
1 Onion Sliced
1 cup Spinach
2 Green Chillies slit
1 cup cooked Rice
1 Bay leaf
2 cloves
1 small Cinnamon stick
1 tsp cumin seeds
1 tsp oil
1 tbsp Desi ghee
Some Roasted Cashews
Coriander Leaves to garnish.

Spinach Pasta Soup!!

Spinach Bow-tie pasta soup!!

Ingredients:

1 cup Spinach leaves
1/2 cup Bow-tie Pasta
1 Onion Finely chopped
3 Cloves Garlic chopped
1 tsp Cumin Pwdr
2 tsp Crushed Black Pepper
1 tbsp butter
1/2 cup yogurt/cream
Salt to Taste

Method:

1.Boil the pasta in a pan of water with little salt for about 15 mins until they are knife soft.

2. In a pan add butter and once they melt add the chopped onions and garlic and saute until they are really soft.

3. Now boil the spinach and puree them along with the sauteed onions and garlic finely.

4. Now pour the puree into a pan and add salt,cumin powder and crushed black pepper.

5.Add some water if needed and let it boil for some 5 mins.

6. Add the yogurt to the soup and after stirring it well add the boiled pasta and let it boil again for 2 mins.

7. The Spinach pasta soup is ready to serve.

*You can use any type of pasta instead of the bow-tie pasta.

* If you want your soup to be tangy then add about 2 tbsp of tomato puree.

Dal Palak / Lentil-Palak Soup

Dal Palak!!

Ingredients:

1 bunch of Palak
2 Tomatoes Chopped
1 Onion Chopped
1/2 cup moong dal/ payatham parupu
1 Green Chilly
2 tsp Ginger-Garlic Paste
1 tbsp Coriander pwdr
1 tsp Chilly pwdr
1 pinch turmeric powder
1/2 tbsp Garam masala(optional)
1/2 tbsp Cumin seeds
1 tbsp oil
Curry leaves
Salt to taste

Method:

1. Wash the spinach leaves and put them in a bowl with the washed moong dal.

2. Add some water to it and pressure cook it for just 2 whistles approximately for 10 mins.

3. Meanwhile, heat a pan with oil and add the cumin seeds,curry leaves and once they splutter add the ginger-garlic paste,coriander pwdr,chilly pwdr, garam masala and saute until they change color.

4. Now add the chopped onions and saute until they are soft and then add chopped tomatoes,salt and green chilly slit and continue sauting till the tomatoes are really soft.

5. Now add the pressure cooked spinach and moong dal.

6. Close the lid and cook for 5-7 mins.

7. Adjust salt according to your taste and the dal palak is ready to serve.

*Dont drain the water after the spinach and moong dal is pressure cooked. So better add only sufficient water to cook them.

* You can also boil the spinach n moong dal in a vessel instead of cooker but it is time consuming so i suggest u pressure cook them.

* You can also use store bought tomato puree instead of fresh tomatoes.

* Dilute it a bit and you can then serve this dish as Lentil-Palak soup 😉

Dal Palak tastes good with chapathi or roti. This is really a nutritious side dish.
